Can anyone tell me which ini's are used to handle any given General's AI?

INI is not used for AI. It is primarily based on scripts, either map-internal scripts or external script files.

For the record, \Default\AIData.ini is used for a few general AI parameters. Other than that, FleetCommand is right that AI is primarily composed of scripts.
